Pandan Crepe with Sweet Coconut Filling

Do you like crepes for breakfast or as a dessert? Crepes have always been a fun breakfast option at home and mom makes ones with jaggery, sweet coconut or caramelized banana. It was also my choice when I want a quick dessert, not overly sweet, but the right amount of sweetness to satisfy sweet cravings. Today's recipe is just your basic crepe recipe with an Asian twist. It looks and tastes exotic with the beautiful aroma of coconut milk and Pandan extract. The coconut filling is also flavored with the beautiful aroma of Pandan leaves.

Pandan Crepes is a rolled-up dessert with beautiful vibrant color. The filling is sweetened coconut with palm sugar and the color is all natural from pandan extract. It is delicate and thin. Biting into the soft buttery crepe with sweet coconut filling is a gratifying experience, especially if you have a sweet tooth. Pandan Crepes is called Kuih Dada/ Dadar gulung and is popular in Indonesia, Malaysia, and Singapore. The coconut filling is the most popular but you can also use creamy tender coconut, banana or sweetened rice filling. It is popular street food and breakfast recipe.

When we think of crepes we always think of a crêperie or a takeaway restaurants serving crepes like fast food. And don't forget those fancy crepe desserts served in cafes and restaurants. But it popular in several cuisines around the world and is made with local ingredients and flavoring. In my home state of Kerala, cardamom is used as a flavoring. Crepes can be made anytime and there are endless options when it comes to filling, both sweet and savory. My kid's favorite is fresh cream and fruits. Give this recipe a try, you will surely love it!


What is Pandan?
Pandan or Pandanus amaryllifolius is screw pine leaves. Pandan is a familiar ingredient in southeast Asian cuisine. It is a tropical plant and is a native of Southeast Asia. It has a pleasant aroma and is widely used as a flavoring agent. It is the plant's leaf that is extensively used for flavoring rice and desserts. It has a sweet aroma that goes perfectly well with desserts. So it is like the Asian vanilla. But it is also used for savory dishes. It Kerala there is a popular chicken curry that uses pandan leaves as a flavoring. You can buy pandan online or from an Asian store both fresh and frozen. Pandan extract is also sold in Asian grocery stores. To get the extract chop pandan leaves and blend it in a blender. Strain using a mesh strainer or cheesecloth and use it for the recipe.

How to make the perfect crepe?
Crepes are buttery, delicate and thin. Crepes are simple to make with basic ingredients like flour eggs, milk and a touch of sweetness. The best flour to use is all-purpose flour, but you can also use rice flour or almond flour. Crepes do not use baking soda or baking powder like pancakes. The ideal crepe batter should be runny thin batter, so do not worry about the consistency of the batter. All you need is a smooth lump-free batter. You can whisk the batter or even easier use a stick blender or regular blender. Add all the ingredients and pulse for 10-15 minutes. For a smooth batter strain using a mesh strainer. Let it rest for half an hour before making the crepes




Recipe for Pandan Crepe with Sweet Coconut Filling

Cooking time- 25 minutes

Cuisine- Indonesian 

Ingredients
For the crepes
Flour- 1 cup
Egg-2
Coconut milk- 1 1/2 cup
Milk- 1/2 cup
Pandan juice- 3 -4 tbs
Salt- 1/2 tsp
Butter- 1 tbs

To make filling
Coconut grated- 1 1/2 cup
Palm sugar- 3/4 cup or 1/2 cup brown sugar
Chopped nuts- 1 tbs
Pandan leaf tied like a knot- 2


To make the filling
First crush and powder palm sugar. Mix 1/2 cup of water and bring it to a boil. Reduce the heat and simmer till it thickens. Add coconut and mix well. Take a pandan leaf and tie it into a knot. Add this with the coconut. Allow the mixture to simmer and cook until it becomes completely dry and leaves the edges of the pan. Allow this mixture to cool down completely. Discard the pandan leaf and set aside.

To get Pandan extract
You can take around 5 pandan leaves. Roughly chop it and add it to a blender. Add 1/3 cup of water and blend for about 30 seconds. Strain the juice using a mesh strainer or cheesecloth. Squeeze as much juice as possible and discard the fiber. If you cannot find pandan leaves use 1/4 tsp concentrated pandan extract.

To make crepe batter
Add eggs, flour, coconut milk, half of the milk and pandan juice into a blender. Start blender on low speed and increase to high. Blend until smooth for 30-40 seconds. Check consistency, it should be thin consistency, add more milk if needed. Strain the batter and set aside for 10 minutes. If you are whisking the batter, whip eggs, and sugar first, add the flour and mix till there is no lump and then gradually add milk and make a thin batter. Alternatively, you can use a stick blender for a smooth consistency

 Heat a 10 or 12-inch nonstick pan. Lightly grease with butter and wipe off any excess butter with a paper towel. Pour around 1/3 cup of batter into the pan and quickly lift the pan and spread the batter by swirling and tilting the pan. Spread batter into a thin, even layer.Let it cook until the top looks set.It will take only 20 -25 seconds. Using a thin spatula lift one edge of the crepe. Grab that edge with your finger and gently peel off the crepe from the pan and gently flip over. Cook the other side for 10 seconds and transfer to a plate. Lay them flat and let it cool before placing the filling. Repeat the same process to make the rest of the crepes. To assemble spread spoon fulls of the filling in the center. Roll or wrap the filling just like spring rolls or egg rolls.

Coconut lovers will surely love this creamy, rich and delicious pudding.If you are obsessed with coconut just like me, try this delicious coconut pudding.Each scoop of this delightfully tender coconut pudding will transports you back to tropical paradise.Coconut pudding is a simple but tastes exotic. Take a look at the list of ingredients,it will make you wonder- tender coconut,tender coconut water, fresh coconut milk, coconut cream,crispy toasted sweet coconut-all in one bowl. You can't get more coconut crazy than this!

There is no special time to make this pudding,but it is perfect for summer time. If you want to make a special dinner try this comforting after dinner treat,your guest will surely love it. In addition to coconut milk this recipe also calls for tender coconut meat.Tender coconut has a sweet and refreshing taste. It also adds to the texture of the pudding.To get the pudding consistency I used gelatin, but you can substitute it with agar-agar or china grass. Roasted coconut used for garnish adds a sweet crunch.You can top the pudding with whipped cream or toasted coconut.Try this you will surely love it.

Ingredients
Coconut milk- 2 cup
Coconut cream- 2 tbs (optional)
Tender coconut pureed- 1 cup
Condensed milk- 1 cup
Rum essence-2-3 drops
(or vanilla Extract- 1/2 tsp)
Gelatin-2 tbs
Butter- 1 tsp
Sugar- 2 tbs
Tender coconut water or milk- 3 tbs
(to dissolve the gelatin)
Shredded coconut- 1/2 cup



Take the young tender coconut and with a spoon scoop out the white jelly inside.Place the tender coconut  meat in a blender and make a fine puree and set aside.

Heat a pan and add one tsp of butter and add the shredded coconut and sugar. Roast till it changes color to golden. Set aside for garnish later.

Take tender coconut water or milk in a bowl and sprinkle gelatin and mix well. Let it stand for two minutes.
In a sauce pan add one cup of coconut milk and bring it to a boil. Add the gelatin and mix well till it fully dissolves. Switch off the flame and add the coconut cream, condensed milk and the rest of the coconut milk.
Allow it to cool down a bit and add the pureed tender coconut and rum essence.Pour into dessert bowl.
Cover with plastic wrap and chill for four to five hours  for the pudding to set. Garnish with toasted coconut or whipped cream.

Karah Prasad/ Wheat Flour Halwa

Karah Prasad is served in Gurudwara as prasad for devotees. It is made with whole wheat flour/atta, ghee and sugar. It has a sweet smell and is so yummy. Try this rich and tasty halwa, you will surely love it.

Ingredients
Whole wheat flour/atta- 3/4 cup
Sugar- 1 cup
Ghee- 1/2 cup
Cardamom powder- 1/2 tsp
Water- 2 1/2 cup
Any toasted nuts of your choice


 In a sauce pan bring water and sugar to a boil. Reduce the flame and allow it to simmer.
Heat ghee in a heavy bottom pan and add the wheat flour. Keep stirring and make sure there is no lumps. Cook in low flame for 3-4 minutes or till the raw flavor disappears and flour changes color to light brown. Carefully add the dissolved sugar and water as it has a tendency to splutter. Mix continuously to avoid lumps. Add cardamom powder and toasted nuts.It will thicken quickly and leave the edges of the pan. Stir till ghee separates and it turns glossy.Switch off the flame and allow to cool before serving.

Chocolate Mousse



Chocolate Mousse

Chocolate mousse is a rich and classic dessert. It is a favorite among many chocolate dessert lovers. It is rich, airy and light dessert with chocolate goodness. This recipe is my absolute favorite,it is an easy no fuss recipe from Nigella Lawson. I have tried this many times and it is a no fail recipe. This is also perfect for those who do not want raw eggs in their dessert. It sets faster  than the regular mousse. Try this, you will surely love it.

Ingredients
Mini Marshmallows- 2 1/2 cups
Semi sweet chocolate- 6 oz.
( preferably dark chocolate )
Butter- 3 tbs
Heavy cream- 1 1/2 cup
Sugar- 3 tbs
Hot water- 1/4 cup
Vanilla essence- 1 tsp
Rum extract- a few drops


Into a sauce pan add marshmallows, butter, chopped chocolate and hot water. Cook in low flame and stir. The chocolate will melt faster. The marshmallows will take about 5 minutes to melt completely. Stir till the mixture is smooth and velvety with no white streaks. Allow this to cool down completely.

In a large mixing bowl add chilled cream and whisk till thick. Add sugar little by little and whisk till soft peak stage. Pour in the chocolate mixture, vanilla essence and rum extract and gently fold in with the cream till it is uniformly mixed. Transfer into serving bowls and refrigerate for 3-4 hours before serving. Decorate with whipped cream or grated chocolate.

Croissant Bread Pudding



Croissant Bread Pudding

Classic old fashioned bread pudding served warm with caramel sauce is one of my top favorite desserts. Left over bread can be converted into a baked classy and yummy dessert in no time. Instead of the traditional bread this recipe uses the rich buttery croissant bread. Flaky buttery bread with rich custard takes this dessert to the next level. Add chocolate chips, nuts or raisins and serve warm or chilled. This recipe is inspired from Nigella Lawson show.Try this,you will surely love it.

Ingredients
Croissant bread- 8 (mini or 4 regular)
Eggs large- 5
Milk- 1 1/2 cup
Heavy cream- 1 1/4 cup
Sugar- 3/4 cup
Semi sweet chocolate chips-1/2 cup
Butter- 1 tsp
Salt- a pinch
Rum extract- 1/2 tsp
Vanilla extract- 1 tsp


Pre heat oven to 350 degree. Melt butter and grease baking dish with it and spread the left over butter in the pan.
Slice croissants lengthwise but not all the way through. Place this in a single layer in the baking dish.
In a bowl whisk eggs, sugar and salt till light and fluffy. Now add milk and heavy cream, vanilla extract and rum extract and whisk well.
Pour this over the croissants and gently press the bread so that it absorbs the liquid. Let it satnd for ten minutes or you can chill in the refrigerator for an hour. Sprinkle chocolate chips just before putting it into the oven
Bake the pudding in the center of the oven, for 30 minutes or till the pudding is puffed and golden. The pudding is set when the knife inserted in the center comes out clean. Allow it to cool down and then serve.

Brownies are addictive with rich chocolate flavor.  These brownies are rich,moist and melt in mouth. If you are a chocolate lover what richer and more delicious taste can you think of than a rich and gooey decadent brownie. This is the first desert I tasted when I first came to the US several years ago. Ever since I have been hooked to this dessert. I have many failed attempts trying to recreate the same taste and texture.  I found this recipe from the book Hershey's Fabulous Desserts and followed the exact recipe. This is my go to brownie recipe and it comes out perfect.Try this,you will surely love it.



Ingredients
All purpose flour- 1 1/2 cup
Cocoa powder- 1/2 cup
Sugar- 1  cup
Baking soda- 1/2 tsp
Salt- 1/4 tsp
Boiling water- 1/2 cup
Butter- 1/4 cup melted
Oil- 2 tbs
Egg- 2
Vanilla extract- 1 tsp
Chocolate chips semi- sweet- 3/4 cup


Pre heat over to 350 degree.Grease 9 inch square baking pan and set aside.
In a medium bowl combine baking soda, cocoa, butter and boiling water. Whisk till the mixture thickens. Stir in egg and sugar and stir till smooth.
Add flour, vanilla and salt and blend till mixture is smooth and even.
Stir in chocolate chips and pour into prepared pan. Bake for 25- 30 minutes,until the brownie begins to pull away from the sides of the pan. Allow it to cool down completely and the slice into squares. You can also frost the brownies with butter cream frosting.

Chocolate Dipped Clementines

It's that time of year when clementines are in season.  I love these little cuties just as they are but they make a perfect snack or a quick dessert.  I use a container of Baker's Dipping *Dark Chocolate.  This container works great with left over chocolate, just pop on the plastic lid and refrigerate until you make these again.  The chocolate won't stay in the fridge long because you'll make these often!
Directions:
Line a baking sheet with parchment paper, wax paper or a Silpat (non stick baking mat). Peel and segment clementines, set aside.  Be careful not to break the skin as the juice will seize the chocolate.  Gently melt chocolate in  the microwave.  Dip segments in chocolate and transfer to parchment-lined sheet. Once all pieces have been dipped, set the sheet aside until chocolate hardens (takes about an hour). To quickly harden chocolate, transfer baking sheet to the refrigerator for 10 minutes. Serve at room temperature.

*You can use milk chocolate if you prefer.

Bread Mango Layer Pudding

This is a quick and easy no bake bread and mango layer pudding. It is easy to fix and will surely impress your guest. It has layers of bread or biscuits, mango custard , whipped cream with mango bits.This mango custard and bread pudding is a delectable and be served as a treat after dinner. You can use other fruits like strawberry, pineapple or a mixed fruit custard. Try this,you will surely love it.
 
Ingredients
Bread slices- 8
Heavy whipping cream- 1 1/3 cup
Chopped mangoes- 3/4 cup
Milk- 2 cups
Condensed milk- 1/2 tin 
Thick Mango puree- 1 cup
Egg yolk-2
water- 1/3 cup
Sugar- 3 tbs
Gelatin- 1tsp (optional)
Vanilla essence-1/2 tsp
Corn starch- 2 tsp


 In a bowl whisk chilled whipping cream for about two minutes. Gradually add the sugar,little by little and continue whipping  till it attains soft peaks.Cover and keep it in the refrigerator  till ready to use.

Chop mangoes for the filling and garnish and set aside.

Take 3 tsp of water in  bowl and sprinkle gelatin and mix well. Let it stand for one minute. Meanwhile heat 3 tbs of water in a sauce pan and bring it to a boil,add the gelatin and stir till it is dissolved and well combined.

Make a puree with the rest of the mangoes ( approximately one cup of puree). Mix this with condensed milk and set aside.

Bring milk to a slight boil in a heavy bottom pan over medium heat. While the milk is heating whisk eggs yolks and one tsp of sugar and beat till the mixture is pale and thick. While constantly beating the egg mixture slowly pour 1/4 cup of hot milk into the bowl and whisk constantly. Pour the egg and milk back into the sauce pan and set over medium low heat.Cook until the mixture thickens.Mix corn starch with water and make a thin paste and stir into the custard mixture. Stir constantly for one minute and switch off the flame
When it cools down a bit add vanilla essence,mango pulp, and gelatin and mix.
You can set the pudding in a glass tray or individual serving cups. Trim off the edges of the bread and layer bread on the bottom. Spread half of the custard over the bread and then the whipped cream and chopped mangoes. Place another layer of bread and pour the rest of the custard on top and spread evenly.Cover and chill in refrigerator for two to three hours. Garnish and serve.

Lychee Pudding

Lychee pudding is a delicious after dinner treat. It is easy to make yet exotic with flavor,taste and texture. Lychee is a summer fruit and is now in season. I picked a bag of lychee from the Asian market. I love to snack on this fruit. I tried this pudding recipe from the book Everyday Chinese Cooking by Leeann Chin. Try this, you will surely love it.

Ingredients
Lychees- 1 1/2 cup
White Grape juice or coconut water- 1/2 cup
Lemon juice- 1 tbs
Sugar-1/2 cup
Unflavored gelatin- 1 tbs
(or you can use agar agar powder)
Sour cream- 1/2 cup
Whole milk- 1/3 cup
Few drops of rum essence or rum- 1 tbs


Take half of grape juice or coconut water in a bowl and sprinkle gelatin and mix well. Let it stand for one minute. Meanwhile heat the rest of the grape juice. Add the gelatin and stir till it is dissolved and well combined.

Make a fine puree of lychee, lemon juice and sugar.
Transfer into a bowl and mix in sour cream, milk, gelatin mixture and rum. Pour into dessert bowl.

Cover with plastic wrap and chill for four to five hours  for the pudding to set. Garnish with lychee,sliced strawberry or berries.

Cherry Sorbet




Cherry Sorbet

Sorbet is a delicious frozen dessert perfect for summer parties. It is very simple and yet refreshing.The chilled  fresh fruit juice with a melt in mouth texture makes it really unique. In this recipe I have used pitted fresh cherries, strawberries and fresh ginger. Try this you will surely love it.

Ingredients
Cherries- 2 1/2 cup
Strawberry- 1 cup
Sugar- 1 cup
Water- 1 1/2 cup
Ginger - 2 thin slice
Mint- 5-6 leaves
Juice of one lemon
Rum extract- a few drops (optional)


Remove the seeds from the cherries and the top stem of the strawberry.
In a medium sauce pan add half of the pitted cherries, one cup strawberry, sugar, sliced ginger, mint leaves and water. Bring this to a boil. Simmer in low flames for 6-8 minutes till the fruit is soft and the syrup thickens. Switch off the flame and strain and allow the syrup to cool down.

Add the rest of the cherries, rum extract, lemon juice and the syrup into a mixer and blend into a smooth puree. Pour into a container and refrigerate till it is chilly.
Pour into chilled ice cream maker and churn for 15 minutes or till you attain a desired consistency. Transfer into a freezer safe container and let it set for at least 2 hours.

If you want to make it without the ice cream maker, simply pour the puree into a freezer safe container and freeze for 2-3 hours. Transfer it into a food processor and blend till smooth. Transfer into the freezer safe bowl and let it set for 4 hours.

I always love making cakes with fresh fruits. Today's recipe is a mango cake with fresh cream. This is a cake to celebrate the mango season. This summer we got ripe, juicy mangoes that are perfectly sweet. Is it not a perfect reason to celebrates? Especially if you love and adore mangoes. This cake is a die for! Each slice of fruity goodness, creamy luxurious and rich will surely satisfy your sweet tooth cravings.

Now coming to the other star ingredient- Pandan extract. Now you may ask what is pandan? Pandan or Pandanus amaryllifolius is screw pine leaves. If you are from Asia you might already be familiar with it.Pandan is a familiar ingredient in southeast Asian cuisine. It has a sweet aromatic leafy flavor and is extensively used in Asian cuisine. So this cake is a blend of western and Asian cuisine. There are many many recipes out there that combine pandan flavor and mangoes. I have been eying on a few pudding recipes, but finally decided to make a cake for my husband's birthday. He loves mangoes and I am so glad I tried this recipe. Pandan and mango go so well together, it is like a match made in heaven!

 It looks and tastes exotic with the beautiful flavor.  Pandan leaves imparts a rich vibrant color and a pleasant aroma. The mangoes I am using is the Alphonso mangoes. It is very sweet and has a rich creamy texture. It is easily available in supermarkets during summer. Give this cake recipe a try and let me know how it turned out for you :)

How to make Pandan Mango Cake

Ingredients
For the cake
All purpose flour-1 1/2 cup
Baking powder- 1 tsp
Baking soda- 1/2 tsp
Salt- 1/2 tsp
Sugar- 1/2 cup
Butter- 1 stick
Egg-5
Pandan extract- 1/2 tsp
Vanilla essence- 1/2 tsp

For the cream
Cream cheese-  5 oz.
Heavy whipping cream- 2 cup
Vanilla essence- 1/2 tsp
Powdered sugar- 1 cup

Mangoes- 3


To make the whipped creamBring cream cheese to room temperature. Whip this soften cream for two minutes. Now into this 2 cup of chilled heavy whipping cream and vanilla essence and whip. Beat this at low speed for one minute and then increase the speed to high. Add powdered sugar little by little and beat till the cream turns into soft stiff peaks. Cover and keep in the fridge till it is time to assemble the cake.

To make the cake. Allow butter and eggs to come to room temperature. Sift flour, baking powder, baking soda and salt 2-3 times and keep aside.
Grease 8 inch round pan with butter. Line bottom with a strip of parchment paper and keep aside.
Preheat oven to 350 degrees F.
Using a hand mixer or a standing electric mixer cream butter until it is soft and creamy for about a minute. Add sugar one tbs at a time and continue mixing for three to four minutes. Once all the sugar is incorporated, scrape down the sides with a rubber spatula and cream the butter and sugar for another 5 minutes till it is fluffy, light and creamy white.
Add eggs one at a time and mix. Make sure it is completely incorporated before adding the next egg.
Whip till the batter is thick and light. Add vanilla essence and the pandan extract and whip for a few seconds. Add flour little by little and fold in till smooth and velvety. Pour batter into prepared cake pan and place in the preheated oven. Bake for 30- 40 minutes or until a toothpick inserted in the center comes out clean. Allow to cool in the pan for 5-10 minutes and then transfer to a cooling rack and allow to cool down completely.

To assemble the cake: Slice the cake into two equal parts. Peel and prepare 3 mangoes. I sliced the mangoes for the top and chopped some into cubes to go in as filling with the cream. Place one sheet and spread a layer of whipped cream and then some chopped mangoes. Place the second layer and spread the cream on top and the sides and decorate with mango slices. Refrigerate for one hour and enjoy it!

Tender Coconut/karikku is a favorite among Malayalees. The water of tender coconut  is refreshing and is a thirst quencher on hot summer days. It is available year around and is used to make several tasty desserts and puddings. Karikku payasam is a simple and quick dessert made with the fleshy meat of the tender coconut along with coconut milk and jaggery. Try this you will surely love it.

Ingredients

Karikku/Tender coconut meat- 1 cup
Tender coconut water- 1 cup
Thick coconut milk- 1 cup

Powdered jaggery- 3/4 cup
(Adjust according to sweetness you prefer)
Water- 3/4 cup
Cardamom crushed- 5-6
Raisins and cashew nuts- a few
Ghee- 2 tsp



In a heavy bottom pan bring 3/4 cup of water and jaggery to a boil. Simmer till it is completely dissolved.Strain the impurities and return to the stove and allow to thicken.

Cook tender coconut meat in coconut water till it becomes soft (note if it is too tender you can skip this step). Pour the jaggery and continue to simmer for 2-3 minutes till the payasam  thickens. Add cardamom powder and finally pour the thick coconut milk and simmer in low flame for one minute.

Heat ghee in a separate pan and fry cashew nuts and raisins till it turns golden brown. Add this to the payasam and mix.Allow to cool and serve.

TIramisu




Happy New Year!  I looked back and realized I didn't post one recipe in December.  It's not that I didn't do a lot of cooking and baking, I did, but during the holidays I stick to my tried and true recipes.  One recipe that has made it into that category is this tiramisu recipe.  If I had to pick a favorite dessert, tiramisu would be it.  I thought I would have to try a few recipes before I found a keeper but after serving this to my daughter (and she likes tiramisu as much as I do), she agreed with me, this one is perfect.

I've only made this twice and have looked forward to making it again soon.  Just so happened, I got a call yesterday about getting some friends together for dinner next weekend. There will be 5 couples and trying to get that many around a table at a restaurant and trying to visit with everyone, didn't sound like as much fun as it would be to just have them all over.  The funny thing was, as I was suggesting to have this dinner party, I was thinking, "Oh good, I have a reason to make tiramisu again!" and "Oh good, I will make those really good stuffed shells that I made over the holidays and forgot to take a picture for my blog and now I can!"  and "Oh good, I have some Limoncello in the freezer I've wanted to open!"  So right then and there, I planned an Italian themed dinner party.   The planning (for me) is always the hardest part and since I already had a plan and my friend did the inviting, and the guests are bringing the wine, this should be an easy, fun and delicious get-together!

Hopefully, I remember to take a photo of the Stuffed Shells this time so I can post them because they are a keeper too!


Ingredients




  • 4 egg yolks
  • 2 tablespoons whole milk
  • 2/3 cup granulated sugar
  • 2 cups (16 oz.) mascarpone cheese
  • 1/4 teaspoon vanilla extract
  • 1 cup heavy cream
  • 24 ladyfingers
  • 1/2 cup cold espresso (I use instant espresso coffee - Medaglia D'oro)
  • 1/4 cup Kahlua
  • 2 teaspoons cocoa powder

  • Directions
  • 1. Fill a medium saucepan halfway with water and bring it to a boil over medium/high heat, then reduce the heat so that the water is simmering.

  • 2. Whisk egg yolks, milk, and sugar together in a medium metal bowl, then place the bowl on top of the saucepan.
  • 3. Whisk the mixture for 10 minutes until the mixture thickens.  The mixture becomes light yellow and thick.  (This does take a lot of arm muscles!)
  • 4. Remove the bowl from the heat and let it cool to room temperature.  Add  2 cups of mascarpone cheese and the vanilla and whisk until smooth.
  • 5. In a separate bowl, whip the cream with an electric mixer until thick.
  • 6. Gently fold the whipped cream into the mascarpone mixture until it’s completely incorporated, but don’t over mix, you want to keep it light and fluffy.

  • 7. Combine the espresso and Kahlua in a shallow bowl, big enough to dip ladyfingers.
  • 8. One-by-one, dip each ladyfinger in the espresso.  The ladyfinger will soak up the espresso like a sponge, so dip quickly.
  • 9. Arrange 12 of the dipped ladyfingers side-by-side on the bottom of an 8 x 8-inch serving dish or baking pan. (You might have to break a few to get a single layer)

  • 10. Spoon about half of the cheese mixture over the ladyfingers, then add another layer of soaked ladyfingers on top of the cheese mixture.
  • 11. Spoon the remaining cheese mixture over the second layer of ladyfingers and spread it evenly.
  • 12. Cover and chill for at least 6 hours.  I like to make the day before.  If by chance there are leftovers, no worries as it is still good days later!
  • 13. Before serving put cocoa powder in a tight-mesh strainer and gently tap the side of the strainer to add an even dusting of cocoa powder over the top of the dessert.
  • 14. Serves 9 large pieces but I like to cut it into 12 smaller pieces.
