Prawns Ghee Roast -Mangalorean Spicy Prawns Masala

Today's recipe is an aromatic and extremely flavorful Prawns ghee roast. It is a popular seafood delicacy of Mangalore. If you love indulging in spicy exotic food, then you don't want to miss on this yummy prawns masala. It is lip-smacking delicious with the right balance of heat and flavor. The magic ingredients are the earthy spices and flavorful ghee or clarified butter.

Mangalore is a food lovers paradise. It is a port city and the melting pot of several cultures and unique cuisines. I had been to Udupi and Mangalore and experienced a unique, diverse culture. Their spicy seafood delicacies will make you crave for more. We had hearty meals and the food was excellent. It got me intrigued by this cuisine and I wanted to recreate some at home. I have already posted recipes like Chicken ghee roast and Mangalore fish curry.

The cuisine of coastal regions like Mangalore has fish as an indispensable part of an everyday meal. There are so many seafood recipes and one may wonder how they transform each dish to have a taste of its own. Prawns ghee roast is one such dish, it's got a class of its own! The ground masala used in this recipe is a fragrant ghee masala paste with a kick of chilly peppers and a tangy taste from tamarind. Spicy or Not spicy-you can make this your own. Experiment a little and find a flavor combo that makes your taste buds happy! This is a great side dish for biryani, ghee rice or just with steamed rice. Get your ingredients together and give this recipe a try, you will surely love it!




The spice powder mix is primarily chilies, peppercorn, cumin, fennel seeds, mustard seeds, and coriander. The chilly used in the authentic recipe is a regional variety. But for this recipe, I have used regular chilly and Kashmiri chilly which is less spicy and gives a good color to the prawns roast. You can soak the chilly and make a paste or dry roast it along with the other spices and make a fine powder.
The masala is slightly tangy. There are two ingredients for the tangy taste- tamarind and yogurt. If the yogurt is sour then you can use a slightly lesser amount of tamarind for a balanced taste.
Ghee gives this recipe its authentic flavor. So as the name suggests try cooking the masala with ghee. I have used homemade ghee or clarified butter in this recipe. Ghee combined with spices and prawns brings out the depth of flavors that makes this dish irresistible.
Cooking the prawns- This is an optional step, but it enhances the taste of the curry. Marinate the prawns for half an hour and shallow fry it before adding to the masala. If you add the raw prawns directly to the ghee roast masala it will release lots of water and will change the texture of the recipe. Do not overcook prawns. It will attain a rubbery texture.
Batch cooking/ Freezer cooking-You can make this masala and store it in the refrigerator. It freezes like a charm, so make a big batch. Store it in individual portion size freezer-safe bags or containers. You can use this masala to cook chicken, prawns, potatoes or mixed vegetables.


How to make Mangalore Prawns Ghee Roast

Cooking time- 15 minutes
Recipe type- side dish
Cuisine- Mangalore

Ingredients
Prawns- 1 lb
Onion- finely chopped- 2 tbs(optional)
Garlic paste- 1 1/2 tsp
Curry leaves- a few
Yogurt- 2 tbs
Tamarind pulp-small lemon sized ball
Turmeric powder- 1/2 tsp
Hing- asafoetida- a pinch
Ghee-3 tsp
salt to taste
To roast 
Dry red chilly- 2
Kashmiri Red Chilly- 4-5
Pepper- 1/2 tsp
Cumin seeds- 1/2 tsp
Coriander seeds- 2 tsp
Mustard seeds- 1/2 tsp
Fennel seeds- 1 tsp
Fenugreek seeds- 1/2 tsp


Preparing the masala
The first step is to dry roast the masala. Heat a pan and start by dry roasting the chilies. Roast on low flame for three to for minutes or till it changes color. Set this aside. 
In the same pan add the rest of the ingredients- pepper, cumin, fennel seeds, mustard seeds, fenugreek seeds, and coriander seeds and dry roast till it changes color and you can hear the mustard splutter.
Remove from the pan and allow it to cool down. Make a fine powder. 
Mix this powder with garlic paste and tamarind water and set aside

Making the prawns masala
Marinate the prawns with turmeric powder, salt, and yogurt and set aside for 10 minutes. Fry prawns until it is slightly golden on both sides. Drain and set aside.
In the same pan add half of the ghee. Add asafoetida , onion and curry leaves and fry for two minutes. Next, add the paste and cook in medium flame for about two to three minutes. Add the prawns and mix well. Add the rest of the ghee and roast on low flame till the masala gets coated to the prawns and the ghee separates. Serve warm with ghee rice, rice roti or with steamed rice.

Chemmeen /Prawns Ularthiyathu




Chemmeen Ularthiyathu
This recipe is for seafood lovers. It is a no fuss quick recipe for prawns. The recipe will definitely sound simple but there is no compromise to taste. It is spicy and little tart and the flavors are distinctive.The souring agent is kudampuli/gambooge which also imparts a unique flavor to the dish,but if it is not available you can substitute it by adding a teaspoon of vinegar   It is a perfect side dish for rice.

Ingredients

Prawns- 1 lb
Chopped coconut piece- 1/2 cup
Kudampuli/gambooge- 3-4 pieces
Pearl onions chopped- 3/4 cup
Ginger sliced- 1 inch thick
Green chilly-2
Turmeric powder- 1/3 tsp
Chilly powder-  3/4 tsp
Pepper powder- 1/3 tsp
Fenugreek powder- a pinch
Coriander powder- 1 1/3 tsp
Mustard seeds- a few
Curry leaves - a few
Coconut oil- 3 tsp
Salt to taste


Cook the cleaned prawns along with coconut pieces, kudampuli, salt and turmeric. Add very little water and cook for two to three minutes. Reduce the flame and allow all the water to evaporate.
Heat coconut oil in a pan and add mustard seeds. When it splutters add curry leaves, ginger, green chilly and sliced pearl onions. Saute till golden brown, reduce flame and add all the spice powders and saute till the raw flavor disappears. Add in the cooked prawns and stir fry for one minute. Serve with rice or pathiri.

Chemmeen Thoran/ Prawns Coconut Stir Fry

Today's recipe is a traditional naadan recipe- a real nostalgia from the coastal regions of Kerala. Seafood thoran is a regional favorite and can be made with fish, prawns, clams, mussels, squid or crab. You'd be surprised at how simple and filling, this can be. What you add to it is totally up to you. You can also make a mixed seafood thoran.

Thoran is usually a quick stir fry with vegetables, grated coconut, and spices. This dish is simple and you can make thoran with almost any vegetable, meat or seafood. I assure you that you are not in for a complicated curry, but one that is simple and easy to make. Just cook the prawns or any seafood of your choice, add spices and hand full of freshly grated coconut and stir fry. This simple and easy to make a side dish and is served with steamed rice. I have already shared the recipe for chicken thoran and fish thoran. Back home mom makes thoran and peera vattichathu with small fish like sardine and anchovies.

Recently when we visited India, my mom made this chemmeen thoran. One cannot refuse good home-cooked food and we devoured every single bit of this seafood delicacy. Soft delicious prawns with the flavor and sweet crunch of freshly grated coconut, cumin, garlic, curry leaves, and coconut oil elevate the flavor profile of this dish. I have used green chilly and red chilly powder for heat. If you are a seafood lover you are going to love this dish. Try this recipe, you will surely love it.


Chemmeen Thoran Recipe
Cooking time- 15 minutes
Recipe type- side dish
Cuisine- Kerala/ Indian

Ingredients
Small prawns-1/2 kg
Shallots chopped-1 cup
Freshly grated coconut- 1 cup
Green chilly-2
Ginger- 1 inch thick
Garlic-4 - 3 pods
Turmeric powder- 1/3 tsp
Chilly powder- 1 tsp
Garam masala- 1/3 tsp(optional)
Mustard seeds- 1/2 tsp
Dry red chilly- 2
Curry leaves -a few

Peel and de vein prawns and keep aside. Chop shallots, ginger and garlic into small fine pieces. Crush coconut and green chilly together in a mortar and pastel and set aside .
Heat oil in a pan and add mustard seeds and allow to splutter. Next add curry leaves  and dry red chilly and after a few seconds the chopped shallots, ginger, garlic and green chilly. Saute this till onions turn golden brown.
Add prawns, turmeric powder, chilly powder and stir fry for two minutes. You can cover and cook too. The prawns releases more water when you cover and cook. After  two minutes add the coconut mixture and garam masala and mix well. Continue to cook in low flame till all the water evaporates. Finally saute in medium high flame for one more minute. Serve with rice.

Chemmeen Mulaku Curry




Chemmeen Mulaku Curry

Spicy prawns curry with rice is something you would love to indulge on. This recipe is the same as the fish muluku curry and here I have not used coconut. But you still have its flavor with the coconut oil. I have used kudam puli or Malabar tamarind, so this curry is a bit spicy and tangy.You can also make prawns curry with coconut milk or with grated coconut.

Ingredients
Prawns - 18-20 medium 
Shallots sliced- 3/4 cup
Ginger- thinly sliced- 2 tbs
Turmeric powder- 1/3 tsp
Chilly powder- 1 1/3 tsp
Kudam puli- 3-4 pieces
Green chilly-1
Curry leaves a few
Fenugreek seeds- 1/3 tsp
Mustard seeds- 1/3 tsp
Coconut oil- 3 tsp




Heat oil in a pan and add mustard seeds and fenugreek seeds. When they splutter add thinly sliced shallots, ginger, curry leaves and green chilly and fry till it is golden brown. Add turmeric and chilly powder and soaked kudam puli and saute till oil separates. Add 3/4 cup of water and cook till the sauce thickens. Add cleaned and de veined prawns, cover and cook for three to four minutes in medium flame. Finally add fresh curry leaves and a  few drops of coconut oil. Serve with rice.

Chemeen Masala Varattiyathu/ Pan roasted Prawns


Chemeen Varattiyathu is a popular sea food delicacy of Kerala. It is not fried prawns but gravy with is almost semi-dry. It is a great side dish for rice. It has the enticing flavors of garam masala and coconut oil and curry leaves. It is spicy, peppery and a bit tangy due to the use of  Malabar tamarind or kudampuli. You can substitute kudampuli with  tomatoes or lemon juice. You can also add coconut pieces in the recipes  which adds to a sweet crunch along with the prawns. Cooking time- 20 minutes
Recipe Type-Side dish
Cuisine: Kerala/Indian

Ingredients
Prawns- 1 lb
Shallots chopped- 1 cup
Ginger and garlic paste- 2 tsp
Chilly powder - 1 1/2 tsp
Pepper powder-1/2 tsp
Coriander powder- 2 tsp
Turmeric powder- 1/3 tsp
Garam masala- 3/4 tsp
fenugreek powder- 1/3 tsp
Malabar Tamarind/kudampuli- 2-3 pieces 
Fennel powder- 1/2 tsp (optional)
curry leaves
Coconut pieces( Optional)
Coconut oil


Clean and marinate prawns with salt, turmeric, pepper and fennel powder and keep it aside for fifteen minutes.
In a pan heat oil and saute shallots till lightly golden brown. Add in ginger garlic paste, curry leaves and saute for a minute. Add in all the dry ingredients including garam masala and saute and immediately add the marinated prawns. Saute for another minute and add soaked kukum along with its water.The prawns will also release its own water. Cover and cook till the prawns is done. Remove the lid and stir and allow the masala to get well coated on the prawns. Serve with rice.
